With this stainless steel noodle roller and cutter attachment for the KitchenAid you can now easily make authentic Japanese ramen noodles. The original KitchenAid attachment only makes a round noodle, which makes this type better suited for original square ramen noodles. To form the dough the roller attachment is needed for sheeting the dough. It can form and press the dough sheets easily into 8 sizes (0.4mm-2mm thickness). Just turn the knob on the side to adjust the thickness. For cutting the dough into ramen noodles, the cutter attachment is needed. It can cut square noodles with a 1.6 mm thickness and 1.6 mm whith. Both fit perefectly onto all KitchenAid mixer modelsand only need to be installed on the pasta machine without manual control. You can therefor semi-automated make all kinds ramen and pasta, without the difficulty of manual pasta rollers. The attachments are convenient to maintain, strong and durable and not easy to break or to be deformed. It is a food safe material, safe and environmentally friendly and can also be used for making fettucine or dumpling sheets. Both are easy to wash (not suited for dishwasher however!) and rust-resistant.  Duly note that a very low hydration noodle below 35% can put stress on the blades, especially when not the dough clumps are not rolled with a rolling pin before. So be sure to use medium or high hydrated dough and to roll the dough thin enough to fit the roller.
