Saibashi or cooking chopstick are an essential utensill for ramen kitchens, whether you arrange your noodles with a beautifull noodle fold (men-sen) or chashu. Because saibashi are much bigger than regular hashi or chopsticks it is much easyer for you to hold food items and therefore you're presentation improves immensly, resulting in beautifull bowls.
